Flatbread with
sweet potatoes and baby spinach
1 kg sweet potatoes, boiled, peeled and mashed
3 handfuls of baby spinach, finely shredded
2 eggs, whisked
2 tbsp chia seeds
2 tbsp poppy seeds
A pinch of salt
7-8 cups wholemeal flour, unsifted and more for dusting
½ cup porridge oats
¼ cup healthy oil
healthy oil for frying.
Optional: ½ pack Greek Feta Cheese, 100g, shredded.
