Flatbread with

sweet potatoes and baby spinach

  • 1 kg sweet potatoes, boiled, peeled and mashed

  • 3 handfuls of baby spinach, finely shredded

  • 2 eggs, whisked

  • 2 tbsp chia seeds

  • 2 tbsp poppy seeds

  • A pinch of salt 

  • 7-8 cups wholemeal flour, unsifted and more for dusting

  • ½ cup porridge oats

  • ¼ cup healthy oil

  • healthy oil for frying.

    Optional: ½ pack Greek Feta Cheese, 100g, shredded.
